Gluten-Free Hash Browns

Ingredients:

  • 800 g waxy potatoes

  • 200 grams of zucchini

  • 50 grams of potato flour

  • 2 onion 1 egg 1 tsp salt

  • 2 teaspoons fried potato seasoning

  • oil for frying

Instructions:

Grate the potatoes and zucchini, place in a cloth and wring out the liquid. Then put in a large bowl. Finely chop the onion, add the egg, potato flour and spices. Mix everything well and heat a pan with oil and fry the hash browns on each side until golden. Make sure the temperature isn't too high, otherwise they'll be crispy on the outside and undercooked on the inside.

Veggie-Pancakes

 

Ingredients:

  • 1.5 cups grated and squeezed veggies (or pulp from juicing)

  • 1/2 cup grated cheese (Gouda)

  • 1 egg

  • 1/4 tsp salt

  • 1/2 tsp ground ginger

  • 1 tsp ground coriander

  • 2 tbsp rye flour

  • 2 tbsp coconut oil (refined)

Instructions:

Grate the zucchini/ carrots into a sieve and squeeze as much juice out of them as possible or use pulp from making fresh carrot juice. Mix the cheese, egg, flour and spices in a bowl and add the veggies to the mix. Combine everything.

Heat up a pan with the oil and with a big spoon, place about 5 pancakes into the pan. When they are golden brown on the bottom side, flip them carefully with a spatula. Let them become golden brown on the other side as well.

Enjoy the pancakes with fresh green herbs and greek yoghurt!

Veggie-Pancakes

Homemade Chocolate Cereal

Ingredients:

  • 550 g flakes (oat, barley, rye, spelt...)

  • 40 g oat bran

  • 200 g seeds and chopped nuts (linseeds, chia, hempseeds, hazelnuts, etc.)

  • 1/2 tsp vanilla extract

  • 1/2 tsp salt

  • 120 g butter/ coconut oil (melted)

  • 240 g honey

  • 60 g cacao powder

  • optional: 100 g chocolate chunks/ chocolate chips

Instructions:

Preheat the oven to 160°C. In a large bowl, mix all the dry ingredients (except for the chocolate chunks!) together. Melt butter/ coconut oil over low heat and mix in the vanilla extraxt and the honey. Pour the honey-mixture over the dry ingredients and mix thoroughly with a spoon until everything is well combined. Lay out 2 baking trays with parchement paper and spread the cereal evenly on both trays using the spoon or your hands.

Bake the cereal for 10 minutes, then take 1 tray out, mix the cereal through, so it doesn't burn on top and put it back in the oven. Do the same with the other baking tray. After another 3-5 minutes of baking, the cereal will be done. You will be able to tell by the nice smell! :) Carefully watch the cereal as it is baking, so that it does not burn!

Take the cereal out of the oven and let it cool for 30 minutes. Then mix in the chocolate chunks and put the cereal into dry and clean glass containers.

Enjoy with milk, or just as a crunchy snack!

Rye Waffles

Ingredients:

  • 2 cups rye flour

  • 2 tbsp chia seeds

  • 3 tbsp sugar

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 2 eggs

  • 2 cups milk

  • 1/2 cup oil

  • 1/2 tsp vanilla extract

 

Instructions:

Heat up a waffle maker. In a bowl, mix all the dry ingredients together. Add the vanilla extract, oil, milk and eggs and mix thoroughly with a big spoon until there are no more lumbs. Take a full ladle of waffle dough and pour the dough in the middle of the waffle maker. Close the waffle maker and hold the lid down for about 10 seconds so the dough can spread. After 5-7 minutes, the first waffle should be done. Repeat the process until the dough is used up.

Serve the waffles with butter, maple sirup and berries or other fruits. Enjoy!
